- 1 C Lemongrass, fine mince
- 4 Khafir Lime Leaves, fine mince
- 1 T Galangal
- 1 Jalapeno or Thai Chili
- 2 Shallots, rough chop
- 4 Garlic cloves
- 1 t Salt
- Using a mortar and pestle, pound and grind all the ingredients into a fine paste.
- Use immediately or store in an air tight container and refrigerate or freeze for later use.
