Fried Smelt with Green Mango + Chruk

INGREDIENTS

FRIED SMELT

  • 1 Lb Smelt, cleaned and washed
  • 1 C Corn starch
  • 1 C Flour
  • Salt and Pepper to taste

GREEN MANGO + CHRUK

  • 1 C Green Mango, shredded
  • 1 T Chruk Pickled Habanero
  • 1 T Fish Sauce
  • 1 Garlic clove, rough chopped

INSTRUCTIONS  

FRIED SMELT

  1. In a medium pot, fill halfway with vegetable oil and bring to 350 F.
  2. Combine Cornstarch and flour in a bowl.
  3. Dredge Smelt in flour mixture and fry for 5 minutes or until golden brown and crispy.
  4. Season with salt and pepper
  5. Serve with Green Mango and Chruk

GREEN MANGO + CHRUK

  1. In a bowl, combine green mango, chruk, fish sauce, and garlic. 
  2. Toss together until well incorporated and let it sit for 5 minutes for the flavors to develop.
